Caviar FAQs

I'm new to caviar. Which one should I start with?

Baerii is the gentlest way in. It has medium, slate-grey pearls with a delicate, buttery flavour and just a light touch of brine, so it's easy to enjoy even if you're not sure what to expect. It's also the most affordable tin in our range, from £42. If you'd like a little more character on your first try, Royal Imperial is a good step up. It opens with a clean briny note and finishes creamy.

How do the four caviars differ in taste?

Think of it as a scale from delicate to rich:

  • Baerii: Mild and buttery, with a gentle salinity.
  • Royal Imperial: Briny to start, then creamy and buttery. It's close in style to classic Caspian caviar.
  • Oscietra: Nutty and creamy, often described as "walnuts and cream", with a long finish.
  • Beluga: The largest pearls, with a rich, velvety texture and a complex, nutty depth.

Oscietra or Beluga: is Beluga worth the extra?

It depends what you want from the moment.

Beluga is about the experience. Large, silvery pearls and a velvety texture deliver a real sense of occasion, which makes it ideal for milestones and gifts.

Oscietra gives more layered, nutty flavour for less than half the starting price (from £49 against £111 for Beluga). Many caviar lovers see it as the best balance of flavour and value.

Royal Imperial and Oscietra are similarly priced. How do I choose?

Choose Royal Imperial if you like a cleaner, classic taste. Its golden pearls are briny, then buttery, and it's lovely with seafood like scallops or lobster. Choose Oscietra if nutty richness and a longer finish appeal to you. It has amber to deep-brown pearls and suits sipping alongside champagne or chilled vodka.

What size tin should I buy?

Allow 30–50g per person if the caviar is the main event, or about 5g per canapé. Once a tin is opened, it's best within 48 hours, so buy for the occasion rather than stocking up.

  • 30g: One person, or two sharing a taste.
  • 50g: A proper serving for two.
  • 125g: A dinner party, or canapés for a larger crowd.

I can't decide. Can I try more than one?

Yes. The Caviar Tasting Selection gives you three 30g tins of Baerii, Royal Imperial and Oscietra, from £126, so you can compare them side by side. For the full range, the Tasting Selection with Beluga adds our most prestigious caviar, from £235.

Which caviar works best in cooking?

Baerii and Royal Imperial suit scrambled eggs, pasta and seafood, while Oscietra and Beluga are best enjoyed straight from the spoon.
