Why does Baerii matter to how we think about sustainability?
Baerii comes from Siberian sturgeon (Acipenser baerii), a species that adapts well to farmed conditions and matures faster than most other sturgeon used for caviar. That combination (resilience and a shorter maturation period) makes it one of the more naturally sustainable varieties to farm responsibly at scale.
It's also the variety we'd point to first if you're new to caviar.
